Hellllooooooo everybodyyyy! I'm back with another recipe! This time its for pan roasted potatoes with garlic, parmesan, dill, scallion, and BACON. Ummm yes please?! I make this a lot when I come back from school. Yes, I eat lunch again right after school. And yes, it takes me an hour to make because I have to cook the potatoes but it is SO WORTH IT. Lets go!
Ingredients:
-6 baby red potatoes
-1 strip of bacon, cut into bite-sized pieces
-1 clove of garlic, minced
-freshly grated parmesan cheese (the more the better)
-about a tablespoon of scallion, finely chopped
-a generous pinch of dill
-salt and pepper
Recipe:
-Cook the potatoes in a pot of boiling water for around 30 minutes or until they are fork tender.
-When they are fully cooked, cut the potatoes in half and set aside.
-In a pan set at medium-high, start cooking the bacon for about 3-5 minutes or until the pieces are golden brown and crisp. (There is no need to add oil since there will be a LOT of bacon fat in the pan)
-Place the bits of bacon on a paper towel to drain off the excess fat. Keep about a teaspoon of the bacon fat in the pan and discard the rest.
-In the same pan, place the potatoes cut side down and pan fry them until they become golden brown, about 5-10 minutes.
-Flip them over and add the garlic, salt, and pepper. Toss to coat and cook for about 2 minutes until all the garlic is cooked through.
-Finally, add the bacon, scallion, dill, and parmesan cheese. Done!
