FOOD DIARY | Red Velvet Cupcakes with Cream Cheese Frosting


Hey guys! I'm starting a new section on The Refreshmint called the "Food Diary" where I just make short posts of things I have made or restaurants I have been too.  I have been caught up with my personal life so I have not been able to post very regularly.  

Today, I made some red velvet cupcakes with cream cheese frosting.  Not going to lie, I didn't make these cupcakes from scratch (Tsk tsk I know) but I needed to make these for an event and was short on time.  

I did, however, make the frosting and the little chocolate hearts (aren't they cute?).  The cream cheese frosting was very simple.  The recipe is as follows:

Ingredients:
-4 oz butter (half a stick), softened
-4 oz cream cheese (half a block), softened
-2-3 cups of icing sugar

Recipe:
-mix all ingredients in a bowl....DONE!

As you can see, it is SUPER simple. The chocolate hearts on the other hand were simple but took FOREVER.  I'm talking an hour piping a bunch of tiny little hearts.  Maybe I'll make a post about how to do that some other time?

Anyways, I just wanted to share these cupcakes because they were yummy (I stole one shhhhhh) and I think they looked cute.  They probably would have looked better with different cupcake liners but they didn't have any in store. Oh well....
